I love banana bread. I don't know that there's much of anything better than a thick slice of fresh banana bread right out of the oven - slathered in butter and joined by a tall glass of milk. Mmmmm.....
Now, most banana bread recipes call for several ripe bananas, but I'm a slightly green banana eater, so I usually have one banana that's left over - past its prime and good for nothing because I don't have enough bananas to make bread. Luckily I found this fantastic recipe for banana bread that uses only one banana. How convenient.
